CORN PUDDING

We took this traditional holiday treat and made it a little healthier. Our corn pudding is made with unbleached flour, corn meal and baking powder rather than using a conventional cornbread mix. We also reduced the amount of sugar — our version highlights the natural sweetness of the corn and is not as overly sweet as some traditional versions.
Ingredients
1 (10-ounce) package frozen corn, thawed
2 tablespoons corn meal or corn flour
2 tablespoons unbleached white flour
2 tablespoons sugar
1/4 teaspoon baking powder
Salt and pepper to taste
2 tablespoons butter, melted
3 eggs, lightly beaten
1 cup skim milk
1 cup shredded sharp cheddar cheese
Paprika, for garnish (optional)
Method
Preheat oven to 375°F. Oil a 7x11-inch glass baking dish with canola or olive oil spray. Set aside.
In a large bowl, mix together corn, corn meal, flour, sugar, baking powder, salt, pepper, butter, eggs, milk and cheese. Pour batter into prepared dish, sprinkle with paprika and bake until dark golden brown and a knife inserted in the middle comes out clean, 45 to 50 minutes.
